Tracy's Cauliflower Casserole

2 lbs cauliflower florets, cut into bit-sized pieces.

1 - 8 oz. box softener cream cheese. 

1/2 - cup sour cream

1 1/2 - cups sharp cheddar cheese

1 1/2 - cups Monterey Jack cheese.

1t - garlic powder

1t - onion powder

6 slices cooked bacon

1/4 - cup chives

Salt & pepper to taste. 


Can always add garlic and/or onions.  


Preheat oven to 425F.

Steam cauliflower until fork tender.  

Grease 9x13 baking dish. 

In a large bowl combine cream cheese, sour cream, cheddar cheese, Mont. Jack, garlic powder, onion powder. Mix until combined.  

Gently stir in Cauliflower, 1/2 the bacon and chives.  

Season with salt and pepper. 

Spoon into casserole dish. Top with remaining bacon. Bake uncovered for 20-25 minutes or until cheese is melted. Top with remaining bacon and and chives.
